Work went late. Puppy training went late. Traffic was horrible, making you—yep. Late. Your favorite radio station was doing a pledge drive the whole way home. Your “trained puppy” shredded an entire magazine in the time it took you to take off your jacket. And it’s only Monday. UGH. If only someone was home to cook you the elaborate dinner you deserve! But you’re ready. You don’t succumb to the siren song of a floppy, disappointing frozen pizza. Instead, you whip out your favorite, hearty, and FAST one-pan recipe: the Impossible™ Sausage Links Sheet Pan Dinner.

This slice-toss-bake meal is nourishing and a cinch to throw together any night of the week. Slice the veggies and toss them with lemon juice, olive oil, salt, pepper, and thyme. Then spread the veg on a preheated baking sheet along with your favorite flavor of Impossible™ Sausage Made From Plants. While this is cooking, you can take care of whatever needs taking care of (or put your feet up!). Once it’s done, top with feta crumbles (dairy or plant-based) and serve with crusty bread, leftover pasta, rice, or orzo. That’s it!

Important pre-cooking note: the ingredients listed below? They’re just thought starters, really. This easy dinner idea can be customized based on the season or whatever is in the fridge. It’s also a great way to use up veggies before they go bad. Mushrooms and broccoli, thinly sliced potatoes and green beans, apples and cabbage all make great substitutions for the cherry tomatoes and zucchini in this recipe. No matter what you have on hand, you can take it easy and still make dinner delicious. Enjoy.

  • 1 Package Impossible™ Sausage Made From Plants, Italian (4 Links, 13.5 oz)
  • 1 Pound Cherry Tomatoes
  • 1 Pound Zucchini or Summer Squash, thinly sliced
  • 3 Garlic Cloves, peeled and sliced
  • 1 red onion, peeled and thinly sliced
  • 2 Tablespoons Olive Oil
  • 1 Bunch Fresh thyme
  • 1 lemon, quartered
  • Kosher Salt to taste
  • Fresh Ground Pepper to taste
  • Bread, Orzo or Pasta to serve
  • Crumbled feta cheese as desired

  1. Prep Your Ingredients

    Place your sheet pan in the oven, and preheat to 375ºF. In a large bowl, toss Impossible Sausage Links, cherry tomatoes, zucchini, garlic, onions, fresh thyme sprigs, and lemon quarters together with olive oil on a sheet pan, and season with salt and pepper.

  2. Roast Your Dinner

    Once your oven reaches temperature, carefully add your ingredients directly to the hot sheet pan. Adding your vegetables and sausages to the preheated sheet pan with provide a better sear and will caramelize your veggies! Cook for approximately 20 minutes, turning sausages halfway through cooking (sausage needs to reach 160°F).

  3. Serve and Enjoy

    Serve your sheet pan dinner with crusty bread or a side of orzo or your favorite pasta. Add crumbled feta (or sub with plant-based feta) for an added salty kick. Enjoy!
