Carlina Will is going to be your new best friend. A chef/TV Writer and Producer/Podcaster/Very Nice Person, she is working with Disney to create a new animated series called Carli’s Magical Baking. In her cooking, Carlina looks to her Southern and Caribbean roots for inspiration, and that’s what you have here in her fascinating recipe for Impossible™ Caribbean Pate.

Now I’m able to enjoy some of my traditional Caribbean recipes thanks to Impossible Foods’ meat made from plants, which cooks just like ground beef and tastes amazing! Immerse yourself into our island culture!”
There are two parts to this dish, which is similar to an empanada. The first step is to make the filling, which involves cooking the Impossible Beef with a mixture of chopped bell peppers. This is a Caribbean dish, so don’t be afraid to go colorful—get green, red and yellow bell peppers.
The dough is a fairly standard dough mix...but don’t forget the vanilla essence! This will give your dough hints of a distinctive and semi-sweet flavor, which will contrast nicely with the savory filling you’ve made.
The key to making pates is to not overload them with filling. Don’t put in more than a tablespoon in the center. This allows you to fold the dough over and seal them with drops of water on the edges so that they seal completely without tearing the dough. It sounds hard, but trust us, it’s not. Relax and if the first couple don’t look quite look perfect, it’s not the end of the world. You’ll be a pro at putting them together in no time.

- 1/2 Green pepper, diced
- 1/2 Red Pepper, diced
- 1/2 Yellow Pepper, diced
- 1/2 Medium Onion, diced
- 1 Tablespoon Dried Basil
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Red Pepper
- 1/4 Cup Tomato Paste
- 1 Tablespoon Curry
- 1 Tablespoon Seasoning Salt
- 2 Tablespoons Butter Or Plant-based Butter
- 4 Cups Flour
- 2 Tablespoons Baking Powder
- 4 Tablespoons Salted Butter Or Plant-based Butter
- 1 Tablespoon Sugar
- 1 Teaspoon Vanilla Extract
- 1 1/2 Cups Water
START THE PATE FILLING
Ingredients used
- 1/2 Green pepper, diced
- 1/2 Red Pepper, diced
- 1/2 Yellow Pepper, diced
- 1/2 Medium Onion, diced
- 2 Tablespoons Butter Or Plant-based Butter
Melt the butter in a pan. Sauté the bell peppers and onions for 2-3 minutes.
SEASON & COOK THE IMPOSSIBLE BEEF
Ingredients used
- 1 Package Impossible™ Beef
- 1 Tablespoon Dried Basil
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Red Pepper
- 1/4 Cup Tomato Paste
- 1 Tablespoon Curry
- 1 Tablespoon Seasoning Salt
Season the Impossible™ Beef with all of the spices and cook in pan with the bell peppers and onions. When the Impossible Beef has finish cooking add the tomato paste and stir until mixed. Then remove from heat.
MAKE THE DOUGH
Ingredients used
- 4 Cups Flour
- 2 Tablespoons Baking Powder
- 4 Tablespoons Salted Butter Or Plant-based Butter
- 1 Tablespoon Sugar
- 1 Teaspoon Vanilla Extract
- 1 1/2 Cups Water
Combine the dry ingredients in a large mixing bowl and mix well. Next, stir in the softened butter. Once the butter and dry ingredients are combined, slowly add the water while continuously mixing. On a flour-dusted counter, form the dough into small golf-ball size balls and let it sit for 10 minutes.
FILL THE PATES
After the balls of dough have sat, roll each one into three inch diameter circles with a rolling pin. Place a tablespoon of the filling in the middle of the circle. Rub water on the edge of the circle and fold to close each pate. Seal the pates with a fork by lightly pushing the tines down around the outer edge of the dough.
COOK THE PATES
Frying Instructions: Heat 6 cups of oil in a pot on medium or use a fryer. Fry until golden brown on one side then turn the pate to the other side and fry until golden brown. Remove and place on a paper towel to cool. Baking Instructions: Heat oven to 350°. Place on a baking sheet and bake for 45 minutes. Remove and let cool.
SERVE, SHARE, AND ENJOY
Makes 12 pates.
