Ready to spice up your morning without busting out all your cooking accouterment? This Impossible™ Sausage Patty Breakfast Quesadilla recipe is easy to make and great for breakfasting on-the-go. (Though if you can get out of your kitchen before finishing it, we’d be super surprised.)

The simple, delicious, juicy, and spicy-as-you-want-it recipe calls for just five ingredients you may already have on hand. It also features our easy-to-cook and amazingly savory Impossible™ Sausage Patties Made From Plants(opens in a new tab). The patties come frozen, but they’re fully cooked—just sizzle them up in a skillet or zap ’em in the microwave. Once nicely browned, remove the patty from the pan and then flop a tortilla in its place with a smidge of butter. Sprinkle with pepper jack and heat until melty perfection. 

To assemble your quesadilla, add the cooked sausage, top with salsa or hot sauce (or both!), and finally, wrap in a napkin for instant portability. But hey, this breakfast quesadilla is not just a mid-week, munch-in-the-car meal—this recipe kicks some major flavors and textures. With a little bit of creative presentation (might we suggest tiny triangles?), this fun dish can be incredibly brunch-worthy.

We like making this meal with our spicy sausages. If you’d rather have a milder start to your morning, you can go with our savory patties and swap in tomatoes for the salsa or hot sauce. And you can easily veganize this breakfast recipe by substituting your favorite plant-based butter and cheese shreds.

  • 1 Impossible™ Sausage Patty Made From Plants
  • 1/2 Teaspoon Butter or Plant-Based Butter
  • 1 Small 4 inch Flour Tortilla
  • 1/2 Cup Grated Pepper Jack Cheese
  • Hot Sauce or salsa to taste

  1. Cook the Impossible Sausage Patties

    Preheat nonstick skillet over medium heat. Place a frozen Impossible Sausage Patty on the skillet, and cover. Cook 2 minutes per side for approximately 4 minutes total or until hot, and remove from pan. Alternatively, microwave patty on high for 1.5 to 2 minutes on a microwave-safe plate.

  2. Melt the Cheese

    Wipe out the pan you used to cook the sausage patties, and add 1/2 teaspoon butter over medium-low heat. Add the tortilla to the pan and sprinkle the cheese evenly over the tortilla. Crisp the tortilla and melt the cheese. Remove from pan to a plate.

  3. Assemble the Quesadilla

    Slice the sausage patty in half, and arrange on one half of the tortilla over the melted cheese. Alternatively, chop the patty into pieces and sprinkle over melted cheese. Add some hot sauce or salsa, and then fold the tortilla in half.
