- 12 oz package Impossible™ Lite Ground Beef Meat From Plants
- 8 oz package Buckwheat Soba Noodles
- 1 tbsp Avocado Oil
- 1/2 Yellow Onion, finely chopped
- 3 cloves Garlic, minced
- 1 tbsp finely minced Ginger
- 1 long Japanese Eggplant, sliced thin
- 1 cup Shiitake Mushrooms, sliced
- 1 Yellow Bell Pepper, sliced thin
- 1 Red Bell Pepper, sliced thin
- Miso Sauce
- 1 Green Onion, sliced thin
- 1 tbsp toasted Sesame Seeds
Miso Sauce
- 1 tbsp White or Yellow Miso
- 2 tsp Sesame Oil
- 2 tbsp Rice Vinegar
- 1 tsp Honey or Agave
- 2 tbsp Water
How to prepare
Step 1: Mix the Miso Sauce
Combine miso paste, rice vinegar, sesame oil, honey or agave, and water in a bowl, and mix until combined. Set aside.
Step 2: Prepare the Soba Noodles
Prepare the soba noodles according to package instructions.
Step 3: Cook the Impossible Beef
Add the avocado oil to a non-stick pan over medium heat. When pan is preheated, add the onion, garlic, and ginger, and cook, stirring often, for 2 minutes or until soft and aromatic. Add the Impossible Lite Ground Beef, and cook until nicely browned and cooked through, about 5 minutes. Remove from pan.
Step 4: Add the Vegetables
In the same pan, add the eggplant, shiitakes, and red and yellow bell peppers. Cook about 5-8 minutes, or until tender.
Step 5: Get Saucy
Add Impossible Beef back to the pan, along with the miso sauce. Thoroughly combine veggies, meat and sauce, and turn off the heat.
Step 6: Plate Up Your Bowls
Divide soba noodles amongst 4 bowls, and top with the miso Impossible Beef and veggies. Garnish with green onion and sesame seeds. Enjoy!
