- 12 oz package Impossible™ Lite Ground Beef Meat From Plants
- 3 Whole Grain or Whole Wheat Burger Buns, toasted
- 6 tbsp Chimichurri Sauce
- 3 tbsp Avocado Smash
- 3 tbsp chopped Piquanté Peppers
- 6 slices Tomato
- 6 leaves Butter or Bibb Lettuce
Chimichurri Sauce
- 1/4 cup Italian Parsley leaves
- 3/4 cup Cilantro leaves
- 1/2 cup Oregano leaves
- 4 tbsp Red Wine Vinegar
- Garlic powder
- 4 cloves Garlic, minced
- 1 tbsp crushed Red Pepper paste, such as crushed Calabrian Chili Peppers
- 1/2 cup Extra Virgin Olive Oil
- 1/4 tsp Kosher Salt
Avocado Smash
- 1/2 ripe Avocado
- 1 tbsp fresh Lime Juice
How to prepare
Step 1: Make the Chimichurri
Finely chop fresh parsley, cilantro and oregano. Combine with red wine vinegar, minced garlic, and crushed red paper paste, and mix until well incorporated. Whisk in olive oil slowly, season with salt and set aside.
Step 2: Smash that Avo
Scoop avocados into a bowl, add lime juice, and smash with the back of a fork.
Step 3: Grill the Impossible Burgers
Over medium-high heat, sear your burgers in a pan or on the grill to desired temperature (approximately 2 minutes per side).
Step 4: Build your Burgers
Spread 1 tablespoon of the chimichurri sauce on the bottom toasted bun, and add two leaves of lettuce on top, as well as two slices of tomato, followed by the Impossible burger patty. Add another tablespoon of chimichurri on top of the patty, followed by 1 tablespoon of chopped piquanté peppers. Spread 1 tablespoon of avocado smash on the top toasted bun, and crown your delicious burger! Repeat assembly for the other burgers, and enjoy.
