“Gyro” is a Greek word that means “round.” That’s going to come in handy the next time you’re trying to impress your friends. They’ll probably say, “I didn’t know you knew Greek!” And you can respond “Yeah, well, maybe there’s a lot you don’t know about me.” And leave it at that. This Impossible Gyro recipe is one of our favorites. The ingredient list might look a bit daunting because it’s so long. But relax. It’s mostly spices. You’re making a richly-flavored Impossible dish here. When you’re making the mix, remember the best kitchen tool ever invented was a pair of clean hands. So dig right in there when making the meat mix. Most of what you’re doing is adding spices to the Impossible™ Burger and then shaping it into those distinctive flat, elongated discs before searing them quickly in a hot pan.

The other important part of any great Gyro recipe is the yogurt mix. And the key ingredients here are the dill and garlic. You can, of course, get dried dill in a jar off the spice rack. But if you can find fresh dill, go for it. Chop it up nicely to make your yogurt mix soar. The basic ratio of dried spices to chopped fresh spices is one teaspoon of dried herbs to one tablespoon of fresh.

One last thing: if any of your friends asks you how to pronounce Gyros, just respond with: “When I make them with Impossible Burger, the correct pronunciation is: ‘Delicious.’” And leave it at that.

  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Onion Powder
  • 1 Teaspoon Oregano
  • 2 Teaspoons Dried Thyme
  • 2 Teaspoons Rosemary
  • 2 Teaspoons Dried Parsley
  • 1/4 Cucumber
  • 2 Teaspoons Dill
  • 1/2 Cup Plain Yogurt
  • 1 Teaspoon Lemon Juice
  • 1 Teaspoon Olive Oil
  • 1/4 Cup Cherry Tomatoes
  • 1/4 Red Onion
  • Salt To Taste

  1. COOK THE IMPOSSIBLE™

    Ingredients used

    • 12 Ounces Impossible Burger
    • 1 Tablespoon Garlic Powder
    • 1 Tablespoon Onion Powder
    • 1 Teaspoon Oregano
    • 2 Teaspoons Dried Thyme
    • 2 Teaspoons Rosemary
    • 2 Teaspoons Dried Parsley

    Mix all the spices and combine with the Impossible Burger. Form into flat oval pieces. Heat a pan over medium-high heat and sear 2-3 minutes on each side.

  2. MAKE TZATZIKI SAUCE

    Ingredients used

    • 1/4 Cucumber
    • 2 Teaspoons Dill
    • 1/2 Cup Plain Yogurt
    • 1 Teaspoon Lemon Juice
    • 1 Teaspoon Olive Oil

    Peel and finely dice the cucumber and mince garlic and dill. Combine with yogurt and lemon juice. Whisk until well incorporated. Add the oil slowly until fully incorporated and emulsified. *Make it 100% plant-based with plant-based yogurt.

  3. ASSEMBLE THE GYROS

    Ingredients used

    • 1/4 Cup Cherry Tomatoes
    • 1/4 Red Onion

    Slice the cherry tomatoes and ¼ of a red onion. Top each pita with Impossible Gyro Meat, cherry tomatoes, red onion, and tzatziki sauce.
