This Impossible™ Gyro recipe is one of our favorites. The ingredient list might look a bit daunting because it’s so long, but relax! It’s mostly spices. You’re making a richly-flavored dish here. The spice mix added to the Impossible™ Burger is a key component to making this dish sing.

The other important part of any great Gyro recipe is the Tzatziki. Tangy yogurt, bright lemon, crunchy cucumber, savory garlic, herbaceous dill, all come together with olive oil to make one of the most delectable condiments. Don't forget to season to taste with salt!

“Gyro” is a Greek word that means “to turn," and is typically made from meat cooked on a vertical rotisserie. We've adapted our recipe for cooking ease in a home kitchen–we sear the gyro meat made from plants quickly in a hot pan for just a few minutes. A delicious recipe that comes together quickly too–definitely one of our favorites!

  • 12 Ounce Package Impossible™ Burger
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Onion Powder
  • 2 Teaspoons Dried Oregano
  • 2 Teaspoons Dried Thyme
  • 2 Teaspoons Dried Rosemary
  • 2 Teaspoons Dried Parsley
  • 1 Cucumber
  • 1 Tablespoon Fresh Dill
  • 1 Cup Plain Yogurt
  • 2 Teaspoons Lemon Juice
  • 1 Teaspoon Olive Oil
  • 1/4 Cup Cherry Tomatoes, sliced
  • 1/4 Red Onion, sliced
  • Kosher Salt To Taste
  • 2 Teaspoons Cumin
  • 3 Tablespoons Vegetable oil
  • 1 Clove Garlic
  • Pita Bread

  1. Season the IMPOSSIBLE BURGER

    Ingredients used

    • 12 Ounce Package Impossible™ Burger
    • 1 Tablespoon Garlic Powder
    • 1 Tablespoon Onion Powder
    • 2 Teaspoons Dried Oregano
    • 2 Teaspoons Dried Thyme
    • 2 Teaspoons Dried Rosemary
    • 2 Teaspoons Dried Parsley
    • 2 Teaspoons Cumin

    Mix together the garlic powder, onion powder, dried oregano, cumin, dried thyme, dried rosemary, and dried parsley, and combine with the Impossible Burger. Form into three flat oval patties. Refrigerate until ready to cook.

  2. MAKE TZATZIKI SAUCE

    Ingredients used

    • 1 Cucumber
    • 1 Tablespoon Fresh Dill
    • 1 Cup Plain Yogurt
    • 2 Teaspoons Lemon Juice
    • 1 Teaspoon Olive Oil
    • Kosher Salt To Taste
    • 1 Clove Garlic

    Peel and finely dice the cucumber, mince the garlic clove, and chop the dill. Combine with yogurt and lemon juice, and whisk in olive oil until fully incorporated. Season with kosher salt to taste. *Make it 100% plant-based with plant-based yogurt.

  3. Cook the Gyros

    Ingredients used

    • 3 Tablespoons Vegetable oil

    Add vegetable oil to a pan over medium-high heat. Sear Impossible gyro patties until golden brown, about 2-3 minutes on each side.

  4. ASSEMBLE and Enjoy

    Ingredients used

    • 1/4 Cup Cherry Tomatoes, sliced
    • 1/4 Red Onion, sliced
    • Pita Bread

    Top each pita with Impossible Gyro, cherry tomatoes, red onion, and tzatziki sauce. Serve and enjoy!
