This Impossible™ Taco Salad recipe offers a slight twist on a traditional taco salad by featuring a creamy, tasty (and easy) chile-lime dressing. When you think about it, taco salads are basically deconstructed tacos you can eat with a fork. You can technically say you’re eating a salad, so that’s a win, right? Another great thing about this recipe? It’s incredibly simple. You will be making your own dressing here for the full effect, but your food processor will do all the work for you. Everything starts with cutting up some onion and garlic and then browning the Impossible™ Burger with the usual array of taco meat spices thrown in. Once that’s ready, simply blend the creamy chile-lime dressing ingredients in your food processor or blender, then use the pulse function while you slowly add the oil to balance the flavors out. From there, all you have to do is add your favorite toppings and assemble the taco salad in your bowl. Of course, you can top your salad with whatever you’d like, but we especially like the crisp and vibrant combination of black beans, tomato, romaine, cilantro, cheese, sour cream, and that delicious chile-lime dressing. Feel free to mix it up—toss on some avocado, drizzle on your favorite salsa, go as crazy as you want. The Impossible taco meat is the real star of the salad here.   • 1 Package Impossible Burger
  • 1/2 Red Onion
  • 3 Cloves Garlic
  • 1/2 Teaspoon Sweet Paprika
  • 1/2 Teaspoon Cumin
  • 1/2 Teaspoon Oregano
  • 1/4 Teaspoon Coriander
  • 1/4 Teaspoon Ancho Chile Powder
  • 1/2 Bunch Cilantro
  • 1/2 Avocado
  • 1 Jalapeno
  • 1 Lime
  • 2 Tablespoons Agave
  • 1 Head Romaine Lettuce
  • 1 Can Black Beans
  • 1 Cup Tortilla Strips
  • 1 Cup Cherry Tomatoes
  • 1/4 Cup Shredded Cheddar Cheese
  • Salt And Pepper To Taste

  1. COOK THE IMPOSSIBLE™

    Ingredients used

    • 1 Package Impossible Burger
    • 1/2 Red Onion
    • 3 Cloves Garlic
    • 1/2 Teaspoon Sweet Paprika
    • 1/2 Teaspoon Cumin
    • 1/2 Teaspoon Oregano
    • 1/4 Teaspoon Coriander
    • 1/4 Teaspoon Ancho Chile Powder

    Mince the red onion and garlic. Combine with the Impossible™ Burger and the spices. Place the mixture in a pan on medium heat and stir until meat is seared brown and cooked through. Add salt and pepper to taste. Remove pan from heat and set aside.

  2. MAKE CREAMY CHILI LIME DRESSING

    Ingredients used

    • 1/2 Bunch Cilantro
    • 1/2 Avocado
    • 1 Jalapeno
    • 1 Lime
    • 2 Tablespoons Agave

    Place ¼ bunch of cilantro, avocado, jalapeno pepper (seeds removed), lime juice, and agave in a food processor or blender and blend until well combined. Slowly add the oil and pulse until the mixture is emulsified. Add salt and pepper to taste.

  3. ASSEMBLE THE SALADS

    Ingredients used

    • 1 Head Romaine Lettuce
    • 1 Can Black Beans
    • 1 Cup Tortilla Strips
    • 1 Cup Cherry Tomatoes
    • 1/4 Cup Shredded Cheddar Cheese

    Chop the romaine and halve the cherry tomatoes. Toss with black beans (drained and rinsed) and Impossible Taco Meat in a large serving bowl. Dress well with the Creamy Chili Lime Dressing. Top with cilantro leaves, tortilla strips, sour cream and cheddar cheese. *Make it 100% plant-based with plant-based cheese and sour cream.
