- 10 oz package Impossible® Steak Bites Meat From Plants
- 1 head Romaine Lettuce, cut, washed and dried
- 1 pint Cherry Tomatoes, sliced
- ½ large English Cucumber, sliced
- 4 oz Blue Cheese or Feta Cheese, crumbled
- Pickled Red Onions
- Green Goddess Dressing
Quick Pickled Red Onions
- ½ cup Apple Cider Vinegar
- 1 tbsp Sugar
- 1 ½ tsp Kosher Salt
- 1 Red Onion, thinly sliced
Green Goddess Dressing
- 1 cup Plain Greek Yogurt or Plant-Based Yogurt
- 3 tbsp Fresh Lemon Juice
- 1 tbsp Extra-Virgin Olive Oil
- 1 tsp Dijon Mustard
- 1 tsp Honey or Agave
- 1 Garlic Clove
- 1 ½ cups Mixed Herbs (Parsley, Dill, and Tarragon)
- ½ tsp Kosher Salt
- Freshly Ground Black Pepper to taste
How to prepare
Step 1: Make The Pickled Onions
Add apple cider vinegar, sugar, kosher salt, and 1 cup water to a mason jar with tight-fitting lid, and shake until salt and sugar are dissolved. Submerge thinly sliced red onion in the liquid in the jar, and let sit at room temperature for 1 hour.
Step 2: Prep The Dressing
Place all ingredients except the herbs in a food processor, and blend until well incorporated. Add the herbs and pulse until well combined.
Step 3: Cook The Impossible Steak Bites
Heat a lightly oiled non-stick skillet over medium heat. Add frozen steak bites to preheated pan, and cook for 11 mins, stirring occasionally. Remove from heat.
Step 4: Assemble The Salad
Divide salad ingredients between bowls, or serve family style. Refrigerate any remaining pickled onions. Enjoy!
