This recipe calls for a number of fresh herbs. Yes, you can always use the dry versions from a spice jar, but we love the vibrant flavor fresh herbs bring to this meatloaf. We've also included a flax egg replacement recipe for those of you who are 100% plant-based and don't consume eggs.

Meatloaf
- 2 - 12 oz packages Impossible™ Ground Beef Meat From Plants
- 1 Yellow Onion, finely chopped
- 4 cloves Garlic, minced
- 1/4 cup Breadcrumbs
- 2 tsp Crushed Red Pepper (optional)
- 4 tsp finely chopped fresh Thyme
- 4 tsp finely chopped fresh Oregano
- 4 tsp finely chopped fresh Basil
- 2 Eggs, or Flax Egg Replacement
- 1/4 cup grated Parmesan or Pecorino or plant-based Parmesan
- 2 tsp Kosher Salt
- 1 tsp Black Pepper
- Finely chopped fresh Parsley for garnish
Meatloaf Glaze
- 1/2 cup Ketchup
- 1 tbsp Sriracha hot sauce (optional)
- 1/4 cup Brown Sugar, tightly packed
- 1 tbsp Apple Cider Vinegar
- 1/4 tsp Black Pepper
Flax Egg Replacement
- 2 tbsp Ground Flaxseed
- 5 tbsp Water
How to prepare
Step 1: Make the Glaze
Mix all ingredients until well incorporated, and set aside.
Step 2: Mix the Meatloaf
Cook chopped onion and minced garlic in a pan until soft, and then allow to cool. Add to a large bowl, and then add the breadcrumbs, crushed red pepper flakes (if desired), thyme, oregano, basil, eggs (or flax egg replacement), cheese, salt, and pepper. Mix to combine. Then add cold Impossible Ground Beef and mix, working quickly so that the mixture stays cold.
Step 3: Pack it In
Preheat oven to 400°F. Parchment line or spray a 8x4 inch nonstick bread pan with cooking spray. Transfer the meatloaf mixture to the pan and press down to form the loaf. Brush the top with half the glaze. Place in the oven for 15 minutes.
Step 4: Baste the Meatloaf
After 15 minutes, remove from the oven and baste with the remainder of the glaze. Cook for approximately 20 more minutes, or until an instant-read thermometer inserted in the center of the meatloaf registers 150°F.
Step 5: Serve and Enjoy
Let meatloaf rest for 10 minutes. The residual heat and resting time with bring the internal temp to 160°F, or fully cooked. Remove from pan and cut into slices, topping with finely chopped parsley. Enjoy!
