- 10 oz package Impossible® Steak Bites Meat From Plants
- 1 Yellow Onion, sliced
- 1 Red Pepper, sliced
- 1 Yellow Pepper, sliced
- 1 Green Pepper, sliced
- 2 tsp sugar
- 1 tsp garlic powder
- 1 tsp cumin
- ½ tsp chili powder
- ½ tsp crushed red pepper
- 2 tsp oregano, dried
- Kosher Salt and Freshly ground Black Pepper to taste
- Juice of 1 lime, plus Lime Wedges
- 4-6 Flour Tortillas
- Salsa
- 8 oz Sour Cream or Plant-Based Sour Cream
- 2 Avocados, diced
Salsa
- 1 lb Roma tomatoes (about 5-6 tomatoes), cut in half
- 3 cloves garlic
- 1 yellow onion, peeled and quartered
- 2 Jalapeños, halved, de-stemmed and de-seeded
- 2 tbsp Grapeseed oil
- ½ tsp Kosher Salt, plus additional to taste
- Juice of 1 Lime
- 1 bunch Cilantro
- Kosher Salt and Freshly ground Black Pepper to taste
How to prepare
Step 1: Make The Salsa
Preheat oven to 450°F degrees with an empty sheet pan on the middle rack. Toss roma tomatoes, garlic cloves, onion, and jalapeños together in a bowl with oil and salt. Remove hot sheet pan and slowly place oiled vegetables onto hot sheet tray. Place the HOT pan with vegetables back into the oven and allow to roast. Roast for approximately 15 minutes, or until all veg is charred and nicely roasted. Remove from oven and transfer to a bowl to cool. When roasted vegetables are cool to the touch, add them along with lime juice and cilantro to a blender, and blend. Taste and season with salt as desired. Your favorite store-bought salsa also works for this recipe if you'd like!
Step 2: Cook The Impossible Steak Bites
Heat a lightly oiled non-stick skillet over medium heat. Add frozen steak bites to preheated pan, and cook for 11 mins, stirring occasionally. Remove from the pan.
Step 3: Prepare The Peppers and Onions
In the same pan, add your onions, peppers, sugar, and spices, and cook, stirring occasionally, until peppers are soft. Add lime juice, and season to taste with salt and pepper. Add the Impossible Steak Bites back to the pan to warm through.
Step 4: Serve and Enjoy
Serve with freshly griddled tortillas, salsa, sour cream, avocado, and lime wedges. Enjoy!
