There are plenty of reasons to love a classic Stir Fry recipe. Bold flavors, the simplicity of the cooking process itself, and the speed in which it’s done give you a familiar Asian dish that’s super versatile when it comes to ingredients. Stir Fry is an easy way to make a delightful meal bursting with complex tastes, regardless of what mix of vegetables you choose to throw in the pan (or wok). In this case, we’ve decided to center it around Impossible™ Burger for a Stir Fry that’s made entirely from plants—which is better for you, better for the planet, and even more delicious. This Impossible Stir Fry recipe combines the perfect variety of vegetables, aromatics, and seasonings to create a vibrant dish that can be served in a number of different ways. For this particular version, we think it’s best served over rice and topped with a fried egg, and maybe some sesame seeds and lime wedges if you really want to take it to the next level.

Stir Fry is a cooking method that moves fast, so you’ll want to make sure you have all your ingredients prepped and ready beforehand. We’ve included shishito peppers in this recipe to add a spicy kick, but keep in mind that you’ll need to have them blistered, chilled, and sliced before cooking. The blistering process can be done in a heavy pan with a little vegetable oil. Simply turn the peppers over a few times until they’re done, chill in the refrigerator for a bit, and then slice them up. (If your local grocery store doesn’t have shishito peppers in stock, you can easily substitute jalapenos or even green peppers if needed.)

Oh, and one final thing: Be careful to not add the tamari, sambal, hoisin, and Thai Basil too early in the cooking process. Wait until the final minute of cooking to throw these in.

  • 2 Tablespoons Canola Oil
  • 1 Each Medium Yellow Onion, Minced
  • 3 Cloves Garlic, Minced
  • 1/2 Tablespoon Ginger, Minced
  • 1 Cup Sugar Snap Peas, Cut On Bias
  • 1 Cup Shishito Peppers, Blistered & Chilled Ahead of Time, Sliced for the Stir Fry
  • 1 Each Red Bell Pepper, Julienned
  • 5 Each Shitake Mushrooms, Sliced
  • 1/2 Each Carrots, Julienned
  • 2 Teaspoons Tamari or Soy Sauce
  • 1/2 Cup Thai Basil, Chopped
  • 1 Tablespoon Sambal
  • 1 Tablespoon Hoisin
  • 4 Each Eggs, Fried Sunny Side Up For Each Dish (Omit for fully plant based version)

  • 1 Each Lime, Cut Into Wedges

  1. START THE IMPOSSIBLE BURGER

    Ingredients used

    • 12 Ounces Impossible Burger
    • 2 Tablespoons Canola Oil

    In a large pan over medium heat, add oil and crumble the Impossible Burger in large, fork size pieces to sear. Once seared golden brown, remove from pan and set aside.

  2. COOK THE VEGETABLES

    Ingredients used

    • 1 Each Medium Yellow Onion, Minced
    • 3 Cloves Garlic, Minced
    • 1/2 Tablespoon Ginger, Minced
    • 1 Cup Sugar Snap Peas, Cut On Bias
    • 1 Cup Shishito Peppers, Blistered & Chilled Ahead of Time, Sliced for the Stir Fry
    • 1 Each Red Bell Pepper, Julienned
    • 5 Each Shitake Mushrooms, Sliced
    • 1/2 Each Carrots, Julienned

    In the same pan over medium heat, add yellow onion, garlic, and ginger. Cook for 2 minutes or until soft and aromatic. Add the carrots, red bell peppers, sugar snap peas, shitake mushrooms, and shishito peppers. Cook for 2 minutes.

  3. ADD SOME FLAVOR

    Ingredients used

    • 2 Teaspoons Tamari or Soy Sauce
    • 1/2 Cup Thai Basil, Chopped
    • 1 Tablespoon Sambal
    • 1 Tablespoon Hoisin

    Add the tamari, sambal, hoisin & Thai Basil. Cook for 1 minute and reduce heat to low for serving.

  4. SERVE, SHARE AND ENJOY

    Ingredients used

    • 4 Each Eggs, Fried Sunny Side Up For Each Dish (Omit for fully plant based version)
    • 2 Tablespoons Sesame Seeds, Toasted
    • 1 Each Lime, Cut Into Wedges

    Serve stir fry over rice, top with sesame seeds and fried egg (omit egg to make dish completely plant-based), and add lime wedge on the side.
