7 Ingredients

  • 12 Impossible® Savory Sausage Patties Meat From Plants
  • 12 English Muffins or Mini Croissants, halved horizontally
  • 18 Eggs or Liquid Plant-Based Eggs
  • 1/2 cup Milk or Plant-Based Milk
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 12 slices Cheddar Cheese or your cheese of choice

How to prepare

Step 1: Prep your Pans

Preheat oven to 350°F. Prepare three sheet pans: lightly oil a standard sized 18x13 inch rimmed sheet pan and then line with parchment paper and oil again. Parchment line the other two sheet pans, and lay out the English muffins or croissants cut side up on one, and use the third sheet pan for cooking the Impossible Sausage Patties.

Step 2: Cook your Eggs

Whisk together eggs, milk, salt, and pepper until thoroughly combined. Add eggs to the prepared oiled and parchment lined sheet pan. Bake until eggs are just set, about 15-18 minutes; let cool 5 minutes. Cut into 12 equal rectangular shapes.

Step 3: Toast and Roast

While eggs are cooking, lightly toast the muffins or croissants in the oven until lightly browned. Brush with melted butter. Lay out the frozen Impossible Sausage Patties onto the last parchment lined sheet pan. Bake for 4 mins, flip, and then cook 4 mins more or until internal temperature reaches 165°F.

Step 4: Assemble and Wrap

Start an assembly line to build all the sandwiches from the bottom bun up. Egg first, then Impossible Sausage Patty, and then cheese slice. Complete each sandwich with a top bun, and then wrap each breakfast sandwich tightly in parchment paper. Store in the refrigerator for up to 4 days, or in the freezer for one month. Directly in the parchment paper, microwave for 45-60 seconds from the refrigerator, or for 90 seconds from frozen.
