Breakfast never tasted so good. We can’t wait to go to sleep at night because when we wake up the next morning, we’ll be making this Impossible Sausage Breakfast Sandwich recipe. Sink your teeth into a classic savory breakfast sausage sandwich but stacked with peppery and herbaceous sausage made from plants. Mouthwatering Impossible™ Sausage Made From Plants (Savory or Spicy) is nestled between two slices of toasted English muffin or bagel, draped in melted American cheese, and cushioned with fluffy scrambled eggs. Don’t sleep in on this marvelous, cheesy sausage breakfast sandwich. Plus, it packs 7 grams of protein made plants per serving to help keep you satiated, satisfied, and full until lunchtime.

Let’s talk about eggs for a second. For the ultimate breakfast sandwich, we’re making sure our scrambled eggs are fluffy and aerated. For perfectly scrambled eggs, crack your eggs into a bowl and use a fork to whisk them together. Scrambling with a whisk tends to incorporate more air which might make your eggs too foamy, airy or bubbly. Make sure to combine your eggs so that the whites and yolks are fully mixed (to avoid streaky eggs).

For soft and creamy scrambled eggs aka a soft scramble, cook low and slow. To do this, stir and fold eggs with butter over gentle heat until the eggs are cooked but pourable. This will create scrambled eggs with the consistency of cottage cheese. For firm and fluffy eggs, crank up the heat. For scrambled eggs that are firm enough to eat with a fork, cook them quickly over a medium-high heat in a pan that is hot before you add the eggs.

Rethink breakfast with Impossible Sausage. Make this sandwich 100% animal-free by subbing in all plant-based ingredients.

  • 6 English muffins or bagels, sliced
  • 6 Tablespoons Butter or plant-based butter, melted
  • 6 Tablespoons Vegetable oil, plus more as needed
  • 1 Package Impossible™ Sausage Made From Plants (Savory or Spicy, 14 oz)
  • 6 Eggs or Plant-based Eggs
  • 6 Slices American cheese or plant-based American cheese
  • Salt & Pepper
5 steps
  1. Toast the bread

Preheat the oven to 350°F degrees. Brush the inside of each English muffin or bagel with the melted butter and toast in the oven on a sheet pan until slightly crispy and golden brown, approximately, 5 to 6 minutes. Remove from the oven and set aside.

  2. Cook the Impossible Sausage

Heat oil in a skillet over medium heat. Shape the Impossible Sausage into six patties, approximately 3.5 inches round. Cook the patties until brown and heated through, approximately 1-2 minutes per side. Once patties are cooked, remove from skillet and place on the bottom half of each toasted English muffin or bagel.

  3. Scramble the eggs

In a bowl, whisk eggs until yolks and white are well-combined. Pro-tip: whisking with a fork will make your eggs light and airy. Season with salt and black pepper. Over medium-low heat, add more oil to the skillet if necessary. Scramble eggs, stirring and folding frequently until cooked to desired consistency. Alternatively, make this recipe your own, and cook your eggs however you'd like–over-easy, poached, or sunny-side up!

  4. Melt the cheese

Top eggs in the skillet with cheese slices. Place a lid over the skillet to melt the cheese.

  5. Assemble the sandwich

To assemble, place egg and cheese mixture on the sausage patty and top with the second half of toasted English muffin or bagel.
