- Impossible™ Beef Made From Plants, 1 Package
- Oil, 2 Tablespoons
- Sweet Corn Kernels, 0.25 Cup
- Water Chestnut, canned and drained, 0.25 Cup
- 1 Small Carrot, washed and peeled
- Ginger, peeled and grated, 1 Tablespoon
- Soy Sauce, 1 Tablespoon
- Vegetarian Hoisin Sauce, 0.25 Cup
- 12-18 Pieces of Tofu Pocket
- 12-18 Pieces of Blanched Chives
- Goji Berries for decoration
How to prepare
Step 1: PREP YOUR INGREDIENTS
Dice the carrot and water chestnut into small pieces.
Step 2: COOK THE FILLING
Heat 2 tbsp of oil in a frying pan over medium high heat. Crumble in Impossible Beef and sauté until brown and cooked through (about 5-7 minutes). Add sweet corn kernels, diced carrot, water chestnut and minced ginger to the pan. Sauté for 3-4 minutes. Add in soy sauce and vegetarian hoisin sauce*. Stir fry for 1-2 minutes, remove from heat and let the filling cool completely. *If you prefer a spicy filling, you can substitute hoisin sauce with Thai sweet chili sauce.
Step 3: ASSEMBLE THE PARCELS
Stuff 2 tbsp of filling into each tofu pocket. Tie the top of the parcel with a piece of blanched chive to enclose and place goji berries on top.
Step 4: COOK THE LUCKY PARCELS
Place tofu parcels into a steamer and steam under high heat for 5 minutes.
Step 5: SERVE AND ENJOY
Transfer to a plate and serve. Makes 12-18 Tofu Lucky Parcels.
