We were hitchhiking once—many years ago when that sort of thing was still possible—and the scraggly old hippie driver who picked us up asked us if we would like “a lettuce sandwich.” Sure, we said. He handed us his version of a lettuce sandwich, which consisted of lettuce wrapped in lettuce. He explained he was “really serious about being a vegetarian.” Hmmm…maybe he took that commitment one step too far.
This Impossible Lettuce Cups recipe, however, lands right in the sweet spot. It’s richly-flavored, crunchy and, well, spectacular. This, Mr. Scraggly Old Hippie Driver, is what you should have offered us! It’s a traditional Chinese dish, and with Impossible™ Burger, it’s earth-friendly AND delicious.
This recipe includes one of our favorite condiments: Hoisin sauce. Hoisin sauce is a dark and tangy sauce made from sweet potato, wheat, rice, water, sugar, soybeans, sesame seeds, vinegar, salt, and red chili peppers. And you don’t have to make your own hoisin sauce. There are lots of outstanding hoisin sauces you can buy.
As far as the best type of lettuce to use for the lettuce cups, we’d recommend Iceberg lettuce. It’s not the most fashionable lettuce, but the leaves are well-suited to forming cups. You could also use Butter lettuce, but Iceberg’s leaf structure holds up better and forms a natural cup.
Fill the cups with the Impossible Burger mixture you’ve cooked up and you have yourself a real lettuce sandwich.

- Impossible Burger, 1 Package
- Oil, 3 Tablespoons
- 1 Spring Onion
- Sweet Corn Kernels, 0.25 Cup
- Water Chestnut, Canned and Drained, 0.25 Cup
- 1 Small Carrot
- Ginger, Grated, 1 Tablespoon
- Soy Sauce, 2 Tablespoons
- Vegetarian Hoisin Sauce, 0.5 Cup
- Spicy Chilli Bean Sauce, 3 Tablespoons
- Lettuce Leaves
How to prepare
Step 1: PREP YOUR INGREDIENTS
Wash and cut lettuce leaves, leave them in a cup shape and set aside. Wash and peel the carrot, then dice into small pieces. Repeat with water chestnut. Cut the spring onion into small pieces.
Step 2: MIX THE SAUCE
Mix soy sauce, vegetarian hoisin sauce and spicy chili bean sauce in a bowl, set aside.
Step 3: COOK THE FILLING
Heat 3 tablespoons of oil in a frying pan over medium high heat. Crumble in Impossible Burger and sauté for 5-7 minutes until brown. Add in sweet corn kernels, diced carrot and minced ginger, sauté for 3-4 minutes. Add in the sauce mixture and stir fry for 1-2 minutes. Remove from the heat and add in minced green onions, mix well.
Step 4: SERVE, SHARE, AND ENJOY
Place 2-3 tablespoons of filling into a lettuce cup and serve immediately. Makes 4-6 servings. Leftover filling could be used to make spring rolls or samosas.
