How to prepare
Step 1: PREP YOUR INGREDIENTS
Soak the dried mushrooms in warm water until soft (around 5-10 minutes). Squeeze out excess water from the mushrooms and dice into small pieces. Reserve 250ml of mushroom soaking liquid and set aside (if there isn’t enough liquid, add water until it reaches 250ml). Mince the shallots*, garlic and ginger. Mix Impossible Beef with cornstarch and 1 tsp oil in a bowl. *You can substitute red onion with the shallot.
Step 2: COOK THE EGGS
To cook the eggs*, place eggs in a pot and add enough water to cover the eggs. Bring to a boil over low heat and cook for 5-8 minutes. Remove the eggs and transfer into a bowl of cold water for 15 minutes. Remove eggs from the bowl and peel off the shells, set aside. *Skip this step if you choose not to use eggs
Step 3: COOK IMPOSSIBLE BEEF
Heat 3 tsp oil in a frying pan over medium heat. Saute garlic, ginger and shallot until golden. Crumble in the marinated Impossible Beef and cook until brown, approx 5-7 minutes. Add in the mushrooms saute until fragrant.
Step 4: BRAISE THE MEAT
Add five spice powder, rice wine, rock sugar, soy sauce, dark soy sauce and mushroom water to the pan. Bring to a boil then add in the shelled eggs. Cover and simmer for 40 - 50 minutes. Season to taste with a pinch of salt and ground white pepper.
Step 5: SERVE IT UP
Cut the braised egg into halves. To serve, place cooked rice in a bowl and top with Impossible Beef mixture and braised egg. Sprinkle chopped spring onion on top to garnish.
