To honor Asian American and Pacific Islander Heritage Month, and highlight the diversity and deliciousness of AAPI heritage, we are excited to share delicious Asian plant-based recipes contributed by our very own Impossible Foods team members!
This recipe comes to us from Jen Shiu. Jen is a scientist in protein discovery by day at Impossible Foods, and a self-proclaimed pie-baking cat lady by night! She says her Thai-Chinese roots via Texas inspire her cooking sensibilities.
Jen told us all about her Impossible™ Zha Jiang Mian Recipe, and her cultural cooking influences. In her words, “Zha Jiang Mian 炸醬麵 is a saucy, meaty Chinese noodle dish that hits the addictive salty, sweet, umami trifecta. It traditionally gets the assist from fermented sweet bean and ground bean sauces, but these Chinese condiments aren’t part of my pantry. As an Asian American of immigrant parents, I grew up with the common experience of being of neither here nor there—one foot in both cultures, but not really part of either. And that’s how I’ve learned to cook over the years, not too attached to tradition and cross-pollinating ideas. So, here is my take on Zha Jiang Mian evolved from ingredients that I cook with to create the distinctive flavors—it’s deliciously from neither here nor there.”

- 12 Ounce Package Impossible Burger
- 10 Ounces Fresh Ramen Noodles
- 5 Tablespoons Miso Paste
- 3 Tablespoons Soy Sauce
- 3 Tablespoons Hoisin Sauce
- 1 Tablespoon Molasses
- 2 Tablespoons Cooking Oil
- 8 Ounces Mushrooms, Diced
- 2 garlic cloves, minced
- 2 Teaspoons Fresh ginger, minced
- 4 scallions, sliced
- 9 Ounces Bean Sprouts
- 1 cucumber, cut into matchsticks
Boil the Noodles
Bring a pot of water to boil, and cook noodles to package directions.
Make the Sauce
Combine miso paste, soy sauce, hoisin sauce, and molasses. Add a splash of hot water to dissolve ingredients. Stir to combine.
Cook the Impossible Burger
Heat 1 tablespoon of oil in a wok or large saucepan over medium high heat. Add mushrooms and cook until browned. Remove from pan. Heat additional 1 tablespoon of oil, and add garlic and ginger, stirring for a few seconds. Add Impossible Burger, breaking it up into chunks. Cook until browned and a bit crispy. Add back mushrooms, scallions, and sauce. Let simmer for a few minutes. Add more water if the mixture appears too thick. Stir in bean sprouts right before serving.
Serve and Enjoy
To serve, spoon Impossible Burger and sauce over noodles, toss well, and pile cucumbers on top.
