This patty melt recipe isn’t only a crowd-pleaser, it’ll be your go-to for busy weeknights, hungry kids, or a special treat that you whip up in a jif. Though this dish originated in Southern California in the 1940s, it’s certainly earned its place as a classic with many iterations of the patty melt being served all over the country. This Impossible™ Burger take on patty melt truly turns things up a notch with cheese that’s super melty, dill pickle slices, and cola-carmelized onions—made with meat from plants so it's better for the planet. Saving the planet with delicious meals.

One of the key flavors in this dish is the cola-caramelized onions. Yes, that's right, you get to cook with cola today; don’t shy away from this combination! Here's how it works—the sugar in the cola works not only to add a light sweetness to the onions, but the sugars also work to break down the onion itself, creating a soft texture and morphing the flavor from raw and sharp to soft and sweet. The combination of sweet, caramelized onions, cheese, rye bread, salty dill pickles and Impossible Burger hits all the notes for a perfect umami flavor.

This dish is filling, nutritious and cooks up in a flash. Put it in rotation to switch things up from a classic burger recipe and get creative with some fun sides to add your own personal flare!

  • 1 Pack Impossible™ Burger (12 oz)
  • 6 Slices Rye Bread
  • 1 Yellow Onion, Thinly Sliced
  • 1 Cup Cola
  • 1 Pinch Salt
  • 3 Slices American style cheese
  • 3 Tablespoons Water
  • Dill pickle slices, as desired
4 steps
  1. Make the Caramelized Onions

    Ingredients used

    • 1 Yellow Onion, Thinly Sliced
    • 1 Cup Cola
    • 1 Pinch Salt

Place sliced onions in a pot. Cover onions about 90% with cola and add salt. Place over medium heat and reduce until cola is completely reduced and evaporated. Be careful not to burn. Set aside.

  2. Make melty cheese sauce

    Ingredients used

    • 3 Slices American style cheese
    • 3 Tablespoons Water

Combine cheese and water in a sauce pan. Heat slowly and whisk until well incorporated. Set aside.

  3. Make the patty melt

    Ingredients used

    • 1 Pack Impossible™ Burger (12 oz)
    • 6 Slices Rye Bread
    • Dill pickle slices, as desired

Form three burger patties, about 4 oz each. In a large pan or on a griddle over medium-high heat, start to toast the rye bread. Add the Impossible Burger patties, and cook for 1 minute per side or until a slight sear has formed. Place each seared Impossible Burger patty on one slice of the bread. Top with caramelized onions, dill pickle slices and cheese sauce, and top with the other slice of bread. Cook until bread is golden brown and burger is desired temperature, flipping the patty melt if needed.
