The Lotus Root is one of the oldest cultivated food plants in human history. Records of its cultivation have been found as far as 3,000 years ago. So this is not an exotic, newfangled food. It’s an ancient part of cooking throughout India and most of the rest of Asia. Just as it sounds, it is the root of the lotus plant, the national flower of India and Vietnam.

Working with a lotus root is roughly like working with a potato. In other words, you’ll need to peel it and clean it. Any dark spots can be cut off, just like a potato.

The other ingredients to pay attention to here are dried Chinese mushrooms, Chinese celery and spring onion. Chinese celery is flavorful throughout and you should definitely include the leaves in the recipe when chopping it up, unlike regular celery. Also, remember, a spring onion is neither a large scallion nor a small white onion. It’s a sweeter-tasting white onion that is roughly the size of a golf ball.

What you’ll be making here is, essentially, a Lotus root sandwich. This is where the Impossible™ Burger comes in. The Lotus root slices will form the outer parts of the sandwich and the Impossible Burger will form the basis of the filling. While this recipe calls for eggs to help form the filling, there is a fully plant-based alternative available to you in the recipe. We’ve included a quick mix you can make with ground flaxseed and water if you don’t want to use eggs, which will serve as the binding agent in place of the eggs.

  • Lotus Root, 1 Pound
  • 4 Dried Chinese Mushrooms
  • Chinese Celery, 1 Rib
  • 1 Spring Onion
  • 2 Egg Yolks
  • Cornstarch, 4 Tablespoons
  • Salt, 2 Teaspoons
  • Sugar, 1 Teaspoon
  • Ground White Pepper, 0.5 Teaspoon
  • Sesame Oil, 1 Teaspoon

How to prepare

Step 1: PREP YOUR INGREDIENTS

Peel and clean the lotus root. Cross cut into thin rounds and place into water for 1-3 minutes to prevent it from turning brown. Soak the dried mushrooms in water until soft, drain and pat dry. Dice into small pieces. Clean the Chinese Celery and spring onion then dice into small pieces.

Step 2: MAKE THE FILLING

Add Impossible Burger, mushrooms, Chinese celery, egg yolk*, spring onion, cornstarch and salt into a food processor and process for 20 seconds. Then add in seasoning and process again until well combined. *Make 100% plant-based with a Flax Egg Replacement by mixing 1 TBSP of ground flaxseed and 2.5 TBSP of water. Mix well to incorporate and let it sit for 5-10 min once mixed for best results.

Step 3: ASSEMBLE THE FRITTERS

Place about 2-3 tablespoons of filling between two slices of lotus roots to form a sandwich. Press together gently and sprinkle the fritters with cornstarch on both sides.

Step 4: COOK THE FRITTERS

On a preheated and oiled pan, fry the fritters on both sides over medium heat until cooked and golden, about 10-15 minutes.

Step 5: SERVE, SHARE, AND ENJOY

Transfer to a plate and serve. Makes 4 servings.
