  1. PREP YOUR INGREDIENTS

    Ingredients used

    • 1 Pound Lotus Root
    • 4 Dried Chinese Mushrooms
    • 1 Rib Chinese Celery
    • 1 Spring Onion

Peel and clean the lotus root. Cross cut into thin rounds and place into water for 1-3 minutes to prevent it from turning brown. Soak the dried mushrooms in water until soft, drain and pat dry. Dice into small pieces. Clean the Chinese Celery and spring onion then dice into small pieces.

  2. MAKE THE FILLING

    Ingredients used

    • 1 Pack Impossible™ Beef

    • 4 Tablespoons Cornstarch
    • 2 Teaspoons Salt
    • 1 Teaspoon Sugar
    • 1/2 Teaspoon Ground White Pepper

Add Impossible™ Beef, mushrooms, Chinese celery, egg yolk*, spring onion, cornstarch and salt into a food processor and process for 20 seconds. Then add in seasoning and process again until well combined. *Make 100% plant-based with a Flax Egg Replacement by mixing 1 TBSP of ground flaxseed and 2.5 TBSP of water. Mix well to incorporate and let it sit for 5-10 min once mixed for best results.

  3. ASSEMBLE THE FRITTERS

Place about 2-3 tablespoons of filling between two slices of lotus roots to form a sandwich. Press together gently and sprinkle the fritters with cornstarch on both sides.
