This recipe comes from Instagram influencer Lynn Davis, or Lynja as she is known to her legions of fans on Instagram and TikTok. Her TikTok account is loaded with lively, fun videos that make cooking for your family seem fun and tasty. As one follower said, “I would like for her to be my new grandma.”

This recipe is an intensely flavorful meatball recipe that can be made entirely plant-based, starting with Impossible™ Beef. The dish is super simple to make and requires only the most modest of prep work. Because it uses bread crumbs (from one slice of bread), the only prep you’ll need to do is set out a slice of bread on the counter early in the day to let it dry out, so it easily crumbles when you work with it later in the day.

One important aspect of this recipe is that it calls for fresh herbs. Sure, you can use dried herbs from jars in your spice rack, but you really would be best served by using fresh herbs here. Fresh herbs are in the produce section of your grocery store, and they really do have a more intense flavor. This is particularly true of basil. First of all, they don’t cost that much. And secondly, they fill your kitchen with lovely aromas while you are working with them. So quit your complaining and buy fresh herbs.

The recipe calls for plant-based alternatives to several ingredients. Lynja recommends almond milk to replace cow’s milk, liquid plant-based egg substitute, and plant-based Parmesan cheese.

  • 12 Ounce Package Impossible Beef Made From Plants
  • 1 Slice Plant-Based Bread
  • 3 Tablespoons Liquified Plant-Based Egg Substitute
  • 2 Tablespoons Almond Milk
  • 6 Cups Spaghetti Sauce
  • 1/4 Cup Grated Plant-Based Parmesan Cheese
  • 5 Tablespoons Olive Oil
  • 1/2 Diced Yellow Onion
  • 4 Cloves Minced Garlic
  • 1 Tablespoon Fresh Thyme
  • 1 Tablespoon Fresh Oregano
  • 1 Tablespoon Fresh Basil
  • 1 Tablespoon Fresh Parsley
  • 1 Teaspoon Crushed Red Peppers
  • 2 Teaspoons Salt
  • 1/4 Teaspoon Pepper

  1. PREP THE INGREDIENTS

    Ingredients used

    • 1 Slice Plant-Based Bread
    • 2 Tablespoons Almond Milk
    • 5 Tablespoons Olive Oil
    • 1/2 Diced Yellow Onion
    • 1 Tablespoon Fresh Thyme
    • 1 Tablespoon Fresh Oregano
    • 1 Tablespoon Fresh Basil
    • 1 Tablespoon Fresh Parsley

    Place bread slice into a small bowl. Add almond milk or plant-based milk of choice. Let it sit for 5 minutes. While the milk is soaking, dice half of a yellow onion and fry in approximately 2 tablespoons worth of olive oil until soft. Next mince the four cloves of garlic. Remove stems from fresh herbs (thyme, oregano, basil & parsley) and finely chop. Once the milk is soaked into the bread crumbs, squeeze the liquid out.

  2. MIX IT UP

    Ingredients used

    • 12 Ounce Package Impossible Beef Made From Plants
    • 3 Tablespoons Liquified Plant-Based Egg Substitute
    • 1/4 Cup Grated Plant-Based Parmesan Cheese
    • 4 Cloves Minced Garlic
    • 1 Teaspoon Crushed Red Peppers
    • 2 Teaspoons Salt
    • 1/4 Teaspoon Pepper

    In a bowl, use your hands to combine Impossible Beef, cooked onions, minced garlic, egg or egg substitute, grated Parmesan cheese, crushed red pepper, salt, pepper, bread and chopped herbs. Mix until incorporated.

  3. FORM THE MEATBALLS

    Form meatballs that are the size of 2 tablespoons; pack tightly.

  4. FRY THEM UP

    Pour about 3 tablespoons of olive oil into a frying pan and cook meatballs on all sides on low until no pink is shown. Approximately 10 minutes.

  5. COMBINE WITH THE SAUCE AND SIMMER

    Ingredients used

    • 6 Cups Spaghetti Sauce

    In a large saucepan with spaghetti sauce, add meatballs. Cover and reduce heat to low and simmer for 20 minutes.

  6. SERVE, SHARE, AND ENJOY

    To serve, prepare your favorite noodles or sandwich, then top with meatballs and sauce, garnish with parsley and grated Parmesan cheese. Enjoy!
