I’ve been trying to make a habit of incorporating more plant-based foods into my diet as I plan for an even healthier 2021. So I partnered with Impossible Foods to give their plant-based meat a try, and I have to say, I am shocked at how undetectable the difference is from traditional ground cow meat.

I used it to make my BBQ Meatloaf recipe and y'all, I light-weight think this version with Impossible™ Beef is better - NO LIE. It came out even more moist than the original, plus it still has that hearty meat flavor and texture I love in a meatloaf. I honestly don’t think you’d be able to even tell the difference if you tried it.

  • 1/4 Each small onion, chopped small
  • 1/4 Each bell pepper, chopped small
  • 1/4 Each celery stalk, chopped small
  • 1 Tablespoon olive oil
  • 1 Clove garlic, minced
  • 24 Ounces Impossible™ Beef Made From Plants
  • 3/4 Cup panko bread crumbs
  • 3/10 Cups milk
  • 2 1/2 Teaspoons kosher salt
  • 1 Teaspoon black pepper
  • 1 Teaspoon Italian seasoning
  • 1/4 Teaspoon liquid smoke
  • 1 1/2 Cups ketchup
  • 2 Tablespoon Worcestershire sauce
  • 2 Tablespoon water
  • 1 Tablespoon apple cider vinegar
  • 1 Teaspoon hot sauce
  • 1/2 Teaspoon garlic powder
  • 1/2 Teaspoon onion powder
  • 1/2 Teaspoon liquid smoke, hickory flavored
  • 1/4 Teaspoon kosher salt
  • 1/4 Teaspoon black pepper
  • 1/8 Teaspoon celery seed

  1. Get it Ready

    Ingredients used

    • 1/4 Each small onion, chopped small
    • 1/4 Each bell pepper, chopped small
    • 1/4 Each celery stalk, chopped small
    • 1 Tablespoon olive oil
    • 1 Clove garlic, minced

    Preheat oven 425℉. Over medium heat, in a small skillet, add oil, onion, bell pepper, and celery and cook for 2 minutes stirring occasionally. Add garlic and cook for 1 additional then remove skillet from the heat.

  2. Season Your Impossible Beef

    Ingredients used

    • 24 Ounces Impossible™ Beef Made From Plants
    • 3/4 Cup panko bread crumbs
    • 3/10 Cups milk
    • 2 1/2 Teaspoons kosher salt
    • 1 Teaspoon black pepper
    • 1 Teaspoon Italian seasoning
    • 1/4 Teaspoon liquid smoke

    In a large bowl add Impossible Beef, panko bread crumbs, milk, salt, pepper, Italian seasoning, liquid smoke, vegetable mixture, and mix for 1 minute until spices and vegetables are well combined.

  3. Prepare the Meatloaf for Baking

    Spray a large sheet of aluminum foil with cooking spray. Add the meatloaf mixture to foil and form into a football shape. Lift the meatloaf by the foil and drop into a loaf pan. Bake in the oven for 10 minutes.

  4. Make your BBQ Glaze

    Ingredients used

    • 1 1/2 Cups ketchup
    • 2 Tablespoon Worcestershire sauce
    • 2 Tablespoon water
    • 1 Tablespoon apple cider vinegar
    • 1 Teaspoon hot sauce
    • 1/2 Teaspoon garlic powder
    • 1/2 Teaspoon onion powder
    • 1/2 Teaspoon liquid smoke, hickory flavored
    • 1/4 Teaspoon kosher salt
    • 1/4 Teaspoon black pepper
    • 1/8 Teaspoon celery seed

    While meatloaf is baking, in a medium pot over medium-high heat add all the BBQ glaze ingredients and stir frequently. Bring the ingredients to a boil then reduce heat to medium. After 10 minutes of baking, carefully scoop and pour one cup of the glaze over the top of the meatloaf. Make sure it is poured evenly over the entire loaf. Put meatloaf back in the oven for 15 more minutes.

  5. Serve it Up

    Remove from the oven, cool for 10 minutes before slicing. Serve warm.
