Fans of Mediterranean cuisine will love this modern reimagining of traditional Greek rolls, combining elements of cheese, onion, paprika, oregano and lemon to bring you a taste of Greece.
Whether you recognise him from his time on Masterchef Australia 2021, or you’ve simply stumbled across his delectable food spreads on Instagram, Greek-Australian Conor’s culinary mastery brings a nostalgic touch to home cooking. When he isn’t shaking up the status quo as an LGBTQI+ advocate, Conor spends his time reinventing recipes for cocktails and traditional Greek food.
With a decade of experience working in restaurants, Conor currently works as a restaurant supervisor for Hanoi Hannah in Melbourne. He dreams that he will one day open an eclectic deli shop named after his mum (Sit Down Dora), and an adjacent bar named after his dad (Shut Up Mike).
Conor credits the women in his family, his mother and yiayia, for his unwavering love for his Greek heritage and culinary traditions that can be tasted in all his cooking. Local cooking legends such as John Paul Twomey, Scott Lord and Joshua Clarke are vital influences to his food.
Take your cheese rolls to the next level with Conor! *Chef's kiss!*

- 1 2-Pack Impossible™ Burger Patties Made From Plants
- 4 hero buns, or medium size soft baguette buns
- 1/2 onion, finely diced
- 8 slices yellow American cheese
- 1/2 iceberg lettuce, washed and thinly sliced
- 3 tomatoes, sliced
- kewpie mayo
- paprika
- 1 lemon, zested
- 1/2 lemon, juiced
- 4 garlic cloves, minced
- oregano
- Cooking oil
- Sea salt and pepper
Make the Greek Mayonnaise
Place the paprika, lemon zest, lemon juice, oregano, and a pinch of sea salt and pepper in a bowl and whisk together. Add your kewpie mayo and garlic and whisk in until you have a mayo that holds itself. Place in the fridge until you're ready to use.
Prep the Buns
Prepare your bun by spooning Greek mayo on both sides and adding a handful of lettuce and three tomato slices. Leave to the side for the chopped cheese.
Make the Chopped Cheese
Pop a non-stick pan on high heat on the stove. Once it's steaming hot, add some cooking oil and place one of your patties in with the onion. Using a pasta scraper, chop the Impossible™ Burger Patty into the onion and let it sear for a couple of minutes. Mix again, then separate your mix in half and cook until the meat nearly looks cooked through. Add two slices of cheese to each mixture and let it melt.
Build Your Greek Chopped Cheese Rolls
Once the cheese has melted completely, using your scraper, pop your chopped cheese into your buns, one portion for each bun. Repeat the cooking process with the second burger patty to build the last two buns. Enjoy altogether.
